Fa la la la freakity la. The holiday season has finally come to a close.
Of course, every day is a holiday when you have love in your heart and cookies in your jar. Or wear your heart on your sleeve, and toss your cookies. Either one works for me.
I have had a fun baking season. Lots of special requests, and a lot of baking to give out as gifts. Yes, I’m sure everyone just loves giving me something thoughtful, unique and local, while I give them a special basket of brownies (by special I don’t mean special sumthin’-sumthin’ brownies, FYI). By this time, I’m sure my friends and family are so over being the taste-testers, and having to waste their time at the gym just to burn it off. I say, “Too bad people, you will eat it, and you will like it, and I will continue to bake it, and you will just have to fake enthusiasm. And I know I’m bossy.”
It’s this whole 2012 thing. The new year always agitates me the first couple of weeks. I know, boo-freakin-hoo. I guess I will just have to bake some cookies, pass them out to everyone I know, and try and decipher from their expression who made new year’s resolutions. That will be fun.
OK, I guess I will give you this treat. It is really simple. I know I did cookies recently, but I got asked for this recipe the other day from a reader, so thought I would share with the class. Vanilla Sprinkle Cookies. See? Easy. These are similar to my butter cookies, with a few subtle changes.
I use powdered sugar in these cookies, and it changes the texture a bit. I like it — it is more of a lighter type cookie. If you aren’t a sprinkle kind of guy or gal (booo)
then you could always just dust them with powdered sugar, but sprinkle is in the title, so you really should live a little and roll the bad boys in sprinkles.
In fact, I think I might change my name to Sprinkles. If you run into me, and see dollar bills hanging out of my shirt, well, then you will know I really did change my name, and with a name like Sprinkles, you know I’m doing more than baking.
Now follow the directions, put some love into it, and invite me over when it’s done.
Vanilla Sprinkle Cookies
2 cups flour
1/4 tsp. salt
1/2 tsp. baking powder
1 cup unsalted butter (softened)
2 cups powdered sugar
1 egg
2 tsp. vanilla Sprinkles for cookies (color, your choice)
Preheat oven to 350. In small bowl, combine flour, salt and baking powder. Set aside.
In large bowl, cream butter and sugar. Mix in egg and vanilla. Stir in flour mixture until well combined (dough will be a tad crumbly).
Place two to three tablespoons of sprinkles in small bowl. Drop 1 tsp. of dough into sprinkles. Place on non-stick baking sheet, or a parchmentcovered baking sheet. Bake for 6-8 minutes, until edges are just starting to turn golden brown. Take out, let cool on pan a minute, place on wire rack or parchment paper. Enjoy!
