Happy birthday, Japango!
Through Saturday, Dec. 18, Boulder’s Japango sushi and Japanese restaurant is celebrating its 11th year in business at the same Pearl Street Mall location.
Japango serves fresh sushi that is flown in every day, much of it directly from the Tsukiji market in Tokyo.
The restaurant is known for authentic traditional Japanese cuisine as well as creative, neuvo-style dishes. In addition to sushi, guests can enjoy a wide variety of Japanese tapas, happy hour every day and catering.
Owner Jon Banis says they are excited about the 11th anniversary and have been offering week-long specials to celebrate. Guests can follow Japango on Twitter for a different deal each day, and everyone will receive 25 percent off dinner bills nightly through Dec. 18.

Big Red F Restaurant Group members Centro Latin Kitchen & Refreshment Palace and West End Tavern will each host a New Year’s Eve event this year.

New downtown restaurant
Chef Theo Adley opened his new restaurant, The Pinyon, on Dec. 10 in the former Bimbamboo location, at 1710 Pearl St. in Boulder. The menu features classic American fare with a focus on local food and beverages, including an exclusively domestic wine and beer list. Warm up with buffalo chili
Each month, the Colorado Department of Agriculture features a different commodity to highlight the variety and quality of products grown, raised or processed in the state. This month, Colorado buffalo is featured in the Buffalo and Bean Chili recipe provided by Chef Jason K. Morse of the Valley Country Club in Aurora.
4 slices Applewood bacon, diced 1 lb. buffalo stew meat, diced 2 cloves garlic, smashed and minced 1/2 red bell pepper, diced 1/2 green bell pepper, diced 1/2 yellow bell pepper, diced 1/2 small yellow onion, diced 1 small fresh jalapeno, minced 1-14 oz. can diced tomato 1-14 oz. can crushed tomato 1-1/2 cans pinto beans, drained 2 tbsp. cumin 4 tbsp. chili powder 1 tbsp. seasoning salt 1 tsp. sea salt 1 tsp. Liquid Smoke Sauté bacon. Add buffalo and garlic, and cook until buffalo is browned.
In a separate pan, sauté onion and peppers until golden. Combine onions and peppers with sautéed meat, add jalapeno and cook. Add tomatoes, beans and seasonings and simmer for 35 minutes. Serve with cornbread.
