Lindsay’s Boulder Deli is a local staple, and it’s made the switch to pandemic service seamlessly. There’s a well-stocked case of to-go meals, and there’s plenty of room to socially distance while ordering and eating; and it’s the eating for which we go back to Lindsay’s time and again. On a recent visit we chose the Ferris Brie-ller, an ultra-satisfying sandwich comprised of turkey, brie, sliced apples, arugula and pesto jam. Stuffed onto a crusty ciabatta roll —you choose 1/4 or 1/2 pound of meat to determine just how stuffed everything is — it’s a well-balanced sandwich, with salty and funky cheese, tart and crispy apples, peppery arugula and savory turkey.
