In preparation to delve into holiday desserts like nobody’s business, I’m giving you an easy breezy berry recipe.
Winter, spring, summer or fall, you can’t keep a good berry down. Actually, I think the next sentence should have been, “All you have to do is caaalll” (for all you James Taylor fans). All you have to do is make this tasty concoction and rest assured, you’ve got a friend.
So before all the fantabulous full-of-life autumn and winter desserts grace our presences, we are whipping up, or at least stirring up, a simple, healthy and tasty treat.
Not to say you couldn’t include this in your holiday recipe collection, but once end of September hits, I’m all pumpkin, cranberries, deep dark chocolate and spices galore. So get those elastic waistband jeans ready and waiting!
Oh, calm down, I’m sure I’ll be providing some low-fat, gluten-free, non-dairy, sugar-free, low-calorie, no-soy, low-salt, no-corn syrup, organic holiday recipes, too.
I love the texture of yogurt — mix it with a few berries, and you’ve got a taste explosion extravaganza. The mint is such a welcome flavor, and gives the dessert just the mouth-watering pop it needs. I realize I’m a little full of adjectives for yogurt and berries; I just enjoy this recipe, and better to be full of adjectives than full of other things I’ve been accused of. Just saying.
Please feel free to use whatever berries you like. I like to use two or three, but it works with just one, or with melon as well. You could also top with toasted pecans or almonds and give it a little crunch.
See why I’m full of … love with this recipe. Lots of options all with a tasty result. That’s a “berry” good dessert.
Now, follow the directions, put some love into it and invite me over when it’s done.
Fresh Berries with Honey Mint Yogurt
2-3 cups mixed berries (I used blueberries, raspberries and strawberries) 1 cup plain yogurt (brown cow is my favorite) 3 tbsp. honey 1 tbsp. chopped mint (plus more for garnish) 1 tsp. cinnamon
Place berries that have been rinsed and dried in one large serving bowl or individual bowls. In small bowl, combine yogurt, honey, mint and cinnamon and stir until combined.
Drizzle yogurt over berries and garnish with mint. Enjoy!
Note: Top with nuts or granola if you want some crunch.
