Try this week: 303 Bowl @ The Fork n’ Frijole

Welcome The Fork n’ Frijole and its brand of “traditional and modern Colorado Mexican cuisine” to Boulder County. The spot, recently opened by a pair of fourth-generation Centennial Staters, has a menu of fresh bowls, burritos, tacos, tostadas and more, with plenty of offerings catering to the vegetarian and vegan crowd. We opted for the 303 Bowl on a recent visit — “southwest” rice topped with spinach, roasted corn and peppers, cilantro, onions, tomatoes, Colorado pinto beans and guacamole. It’s vegan, but you can choose a meat or veggie protein — we went with succulent pulled pork that’s crisped at the edges. It’s generally a food media rule of thumb that you give a restaurant a few months to open before you visit — let ’em sort out the details before you judge ’em — but The F-n’-F seems like it’s got it figured out. We’ll be back to try more of the menu and take advantage of Taco Tuesday specials and family dinners.
